Chicken Parm Healthy Leanie Greenie!

OK... Let me just say, this is WAY naughtier than it looks. With that being said, here we go!

Ingredients:
4oz Chicken Breast
2oz Skim Mozzerella Cheese (1/2 cup)
1/2c Diced Sugar Free Tomatoes (1 green)
1c squash

Spices:
Thyme
Oregano
Garlic
1 tsp Light Margarine (optional and 1 healthy fat)

OK! First we will get our tomatoes and blend the fooey out of them in a magic bullet or any other blendy type appliance. Empty what is now sauce, in a pan. Add oregano, thyme, garlic and margarine. Simmer for about 2 minutes.

Put sauce aside and saute your squash. Now put squash aside. In the same pan, add your chicken and cook it (I pre-cook mine so I just plop it in there). After your chicken is cooked, pour the marinara sauce on top and cover with the mozzarella cheese. Put a lid on it and let it simmer for about 5 minutes or until the cheese is nice and melty. Plate it and enjoy!

DROOLS!

Salmon Noms Leanie Greenie!

I bought a WHOLE salmon, head and all so my steaks are ugly... Lol.

Ingredients:
5oz Wild Caught Salmon (Never farmed!)
1c Asparagus (5oz if you don't want to cut your spears, 2 green)
1/2c Mushrooms (1 green)

Spices:
Garlic
Sea Salt

Grill your salmon in 2tsp of olive oil (2 healthy fats). Make sure the pan is hot and ready before you put your fish on. This will allow it to get nice and crispy! Don't overcook it! Season as you like.

After your salmon grill your asparagus for about 3-4 min so it's still crunchy and has some life to it. Then throw in your shrooms!

SCARF!!!

Turkey Burger Leanie Greenie!

Another simple one!

Ingredients:
5oz Turkey or Costco turkey burger patty
1/2c Scallions (Didn't realize onion was not on plan) (1 green)
1/2 Mushrooms (1 green)
1/2 Tomatoes (1 green)

Spices:
Garlic
Sea Salt

Grill your patty in a pan. If you're using Costco turkey burgers it is about 1 1/2 patties. Saute shrooms and onions. Season to taste. Voila!

Nums.

Stir Fry Leanie Greenie!

This leanie greenie was not as exciting, but still good! Sometimes less is more.

Ingredients:
5oz Stir fry round steak
1c Mushrooms (2 green)
1c Spinach (1 green)

Spices:
Garlic
Sea Salt

Well, throw your meat in a pan and cook it for a few minutes. Add your mushrooms and spinach and saute. Season to taste! Easy peasy!

NOM!

Chicken Enchilada Soup, Leanie Greenie!

This soup is DELICOUS!

Here is the recipe!

Ingredients:
4oz Chicken Breast
1/2c Skim Mozzarella Cheese
2c Chicken Broth (preferably homemade broth, it tastes better)
1/2c Mixed Bell Peppers (Green and Red = 1 green)
1/2c Onion (1 green)
1/2c Sugar free diced tomatoes (1 green)
Cilantro

Spices:
Cumin
Chili Powder
Pasilla Powder
Garlic

Saute peppers and onions until slightly charred. Add your diced tomatoes and scoot 'em around the pan for a bit. You can then add your broth right to the pan. Season to taste with garlic, cumin, chili powder and pasilla pepper powder (pasilla molido). You can salt it if you'd like, but I boiled the bones from a rotisserie chicken, so it did not need salt.

Enjoy!

Fiber One Protein Cereal!

I am a BzzAgent. Here is my story...
(Review of Fiber One Protein Cereal)

Maple Brown Sugar:

WOW! The first thing I noticed as soon as I opened the box, was that it smelled like pancakes. This one was my FAVORITE. It is so, so, so good.

If you have a craving for something sweet and low calorie, then this is your best bet. It tastes exactly as described, like Maple Brown Sugar. I have no other words to describe it other than mapley, sugary, delicious and YUM.

These cereals leave me full for quite sometime and that is an accomplishment because I get hungry every 2 hours.

Thank you General Mills and BzzAgent , for providing me with this delicious cereal. I am curious to see if we have this in our micro kitchens at Google. I hope so!!! :)

Cranberry Almond:

The cranberry almond was delicious! It was fruitier than expected. I love the fact that it is a healthier option for breakfast.

The fruity notes are an unexpected yet pleasant surprise. I was expecting a tart cereal. It was nice that it was sweet!

The cereal had plenty of cranberries. It made me a bit thirsty, but that's what milk is for!! The pellet form is a bit weird... Reminds me of alfalfa pellets, lol!

Overall, I give it a 7/10. Exceeded expectations!

The Duo!!!

I talked to my fellow Googler's and housemates. I even forced the cereal on them :) Lol.

Maple Brown Sugar was the winner. The thing that threw everyone off, was that the Cranberry Almond didn't really taste like cranberries.

Maple Brown Sugar:

  • "It has more Flavor. I don't know, it just tastes better"
  • "It really DOES smell like pancakes! How weirdly awesome"
  • "Mmmmmmmmmmmmmmmmmmmmmm!!!!"

Cranberry Almond:

  • "Yeah... It's good."
  • "It sure is better than most cereals"
  • "You'd better hide this cereal otherwise I just might eat it all"

Fiber One Protein was a success! Thank you again General Mills!!!!!

UPDATE 2014

Well. What a crazy year so far. I am employed! Yippee! I used to work at Apple Headquarters  in Cupertino but unfortunately, I got laid off! I am at a MUCH better place of employment now. The Happiest Place on Earth. Google. :)

I have no words for how incredibly grateful and LUCKY I am to work for such an awesome company. So far, I have survived!!!!

March will mark a year of me being on my own. I miss my parents to death but I do not miss the crap town they live in, nor any of the people who reside there (aside from my mom and dad).

My sister got married! (Diana) So weee!!! Lol. Hmmm.... I think those are the main highlights.... I can't really think of anything else! All is well in the land of Victoria!

I am going to start posting some more reviews here since I kind of got off track. Mainly because I moved, and just didn't have the time. Google has allowed me to have a little more free time to do things. I love doing all my dorky reviews! Haha.

I hope to be seeing more of you! Whoever reads this Blog. I am SO bad with keeping up on this. Bad, bad, bad!!!! :)
